At the beginning of the book, Ben is recounting the events of the story to Gerry while Dylan is absent. Do you think this is because Dylan dies from his infection or simply isn't there?

Well, I already finished the book so I know the answer to this question! But I can take a look at the question in a slightly different way! I believe the author shows this "recount" by Ben to intensify the beginning of the book and to add suspense. By adding this suspense, the author grabs the readers attention, or a person who is unsure whether or not to read the book, and makes them want to pick up the book and "dive in."

I believe that it is because Dylan dies from his infection. The only brother Ben mentions is Gerry at the beginning of the book. Dylan's name is not referenced and Gerry wants to pretend that he does not remember the events ever occurred. Unfortunately, there is a strong likelihood that Dylan dies from his injuries.
